Menu Plan Monday

In an effort to plan out our meals and keep our grocery budget in line, I’m going to play along with I’m an Organizing Junkie’s Meal Plan Mondays.  The challenge is that DH is a octo-lavo vegetarian so beef, chicken, and pork are out. 

I’m going to start my meal planning slow and only do Monday-Thursday.  Friday it has become a tradition to do take-out (usually no more than $15 for the two of us from the local Mexican place or a pizza).  Saturdays and Sundays at this point tend to be more variable in terms of our plans and what types of meals we might be in the mood for (usually fairly light and quick)…  also, DH likes to prepare meals on the weekends so I let him handle the grocery shopping for those meals.

Monday: Tuna Casserole with salad

Tuesday: Pasta Primavera with salad

Wednesday: (my yoga night so I get home after 7 p.m.) leftovers

Thursday: Grilled Cheese Sandwiches with garden salad

Friday: take-out

Breakfast and lunches are pretty much always the same: cereal and fruit in the morning, and a brown bag lunch that includes a sandwich, crackers, fruit, water, and carrots.
